QUINOA TEA CAKE RECIPE

Quinoa Orange Tea Cake

Serves 10

125g butter
1 cup sugar
2 eggs
½ cup milk
1 ½ cups self-raising flour
Grated zest of one orange
1 cup cooked quinoa Glaze
1 cup icing sugar
2 tablespoons orange juice
1 teaspoon melted butter

Preheat oven to 180°C. Grease a 20cm cake pan. Melt the butter then add to a bowl with the sugar, eggs, milk, sifted flour and zest. Beat with an electric mixer on medium-high speed for six minutes. Stir in quinoa, spoon batter into pan and bake for 30–35 minutes, or until a skewer tests clean. Remove from oven, allow to cool and spread with glaze. To make glaze: Combine all ingredients in a small bowl and mix well.
